1. Preheat oven to 350F
2. In a large bowl mix together (using a hand blender) eggs, coconut oil, juice, zest, maple syrup and vanilla for about 2 minutes (until light and fluffy)
3. In another bowl combine all dry ingredients
4. Add dry ingredients to wet ingredients and blend until just combined
5. Fill 24 parchment paper lined muffin cups 3/4 full
6. Bake for 20 minutes
