1. Soak quinoa for 3 - 8 hours.
2. Drain and rinse quinoa.
3. Add quinoa and 2/3 cup water to a pot with a tight fitting lid and bring it to a boil.
4. Turn to low and cover with lid. Simmer for 15 minutes.
5. Meanwhile add seeds and coconut to food processor and pulse until ground into a coarse powder.
5. Add in dates, coconut butter, chocolate chips and hot quinoa.
6. Process until it comes together in a ball
7. Scoop out a teaspoon at a time and roll into tight balls.
8. Roll in coconut to coat.
9. Refrigerate until chilled.
10. Store in a sealed container in the fridge.
