1. Lightly saute onions in coconut oil, add in peppers and cook until just tender
2. Turn heat to low and add in rice, chicken, cucumbers and tomatoes
3. Mix up dressing - in a jar combine lemon juice, red wine vinegar, olive oil, minced garlic, oregano and salad. Shake well.
4. Place rice, chicken, veggie mixture in a large bowl. Top with feta and toss with dressing.
5. Enjoy warm as dinner and/or cold for lunch and quick meals.
