1. Soak quinoa grains in water (at room temperature) for 3-8 hours. I do it overnight.
2. Drain and rinse grains.
3. Add grains and 1 cup fresh water to a pot. Bring to a boil then turn to low and cover. Let simmer for 15 minutes.
4. Preheat oven to 350F.
5. Line mini muffin tins with parchment paper baking cups.
6. Add cooked quinoa and all other ingredients in a large bowl. Mix well.
7. Scoop mixture into lined muffin tins.
8. Bake for 20 minutes.
